Today, I have decided to bring a dish that was a favorite in the movie “Seems Like Old Times”. In this movie, Goldie Hawn and Charles Grodin(Goldie’s present hubby) have a housekeeper named Aurora. She makes a dish called “Aurora’s Famous Chicken Pepperoni” that later ends up being served by Chevy Chase(Goldie’s first hubby and escaped, framed convict) to a judge that is a guest at Goldie and Charles house. Very funny flick. Check it out if you’ve never seen it. I recommend watching it again just because it is funny.

Enough with the movie and on with the sandwich of the week. “Aurora’s Chicken Pepperoni Bagel Sandwich” Once again, we’ll need to go out and get the freshest bagel you can find at your local supermarket. Today I am using a whole grain bagel. 1 Weaver frozen chicken cutlet, 2 slices mozzarella, 6-8 slices of pepperoni, a little tomato sauce, some Romano cheese and some crushed red pepper to add a little flair.

We start by slicing and toasting our bagel. While the bagel is toasting, I like to wrap the chicken cutlet in a paper towel, then microwave for 90 seconds. This is also a good time to warm your tomato sauce. By now the bagel should be toasted. I like to butter the bottom half of the bagel. Pile on the pepperoni, a slice of mozzarella and a little sauce. On the top half, I add the warmed chicken cutlet, a little tomato sauce and another slice of mozzarella. Sprinkle some Romano cheese and the crushed red pepper.

Place both halves on a microwave safe plate and cook high power for 45 seconds or until the cheese is melted. Put both halves together and you now have an extraordinary sandwich to enjoy.

It is so great that you referenced that movie, which is very funny. I was just looking online for a new chicken recipe and what one just popped into my head but “Aurora’s chicken pepperoni”, which always sounded really good to me. I will definitely have to give your version a try. Thanks!

looks great, that movie is hilarious. but they actually serve it to the governor of the state of california.
