The Elephant Egg Bagel Sandwich w/Spam

This week, I thought I would take a childhood favorite and add a bagel to it. When I was a kid, my brothers and I would cook our own eggs. My brother Jimmy taught me how to make an elephant egg. Which everyone else on the planet called an egg in a raft. So he took this piece of bread and he knocks out a hole in the middle and fried an egg in it. It was delicious. He would also grill the knocked out piece of bread to soak up the yoke with. He called it an elephant egg. I think he called it that because the bread around the egg made it look like a big fried egg. So… enough with the history and on with the egg sandwich of the week. Hopefully a famous bagel sandwich.

Let’s start out again by picking up the freshest bagel you can find at your local grocery store. I am using a plain bagel because that’s what I fancy, you can choose any bagel you find palatable. I wouldn’t go as far as to use a blueberry bagel, but… you know, knock yourself out.

So the first thing we need to do is basically cut a round piece of bread out of the middle of this bagel. Now you want to do this without destroying the whole bagel. What we are really looking to do is get three bagel slices out of one bagel. Two ends and one middle. The middle is what we intend to use to knock a hole in the middle. I am using a round cookie cutter. You can use any shape you want, just remember you have to drop an egg in the center and preferably for me, with yolk in tact. I am also adding two thin slices of fried Spam. You can use bacon, sausage, or any other slice of heaven you find as a compliment to your egg sandwich.

You’ll need a big enough pan to grill the egg and bagel top and bottom, or two pans work if you grill the bottom in one pan while you cook the egg and raft in another pan. You can grill the top while you flip and fry the egg and raft.

If you grill your bagels to a golden brown over medium heat, your egg yolk will be nice and runny. Be careful, this sandwich has been know to explode on first or second bites, so be prepared and please enjoy.

Wow! Why so surprised? Or do you always judge before you try. Had enough time on your hands to view and reply, why not take a few minutes to cook it. It is absolutely a delicious sandwich. Got to do something with the down time that this economy is providing for us. Plus it takes me less than ten minutes to prep, cook and clean if your an efficient cook. Taking pictures is an additional thirty seconds for all ten pictures. Thanks for the response tho, negative blue…
